
Ingredients
3 mixed peppers sliced
2 courgettes sliced
2 onions grossly sliced
3 tbsp olive oil
1 tbsp oregano
2 cloves garlic
15 mixed olives pitted
1 tsp sugar
1 tbsp olive oil
1 tbsp vinegar
salt to season
4 pieces of cod or other fish of your choice
Place all the ingredients in a large shallow oven dish except for the fish and those for the gratin. Mix well.
Let cook for at least 30 minutes until the vegetables are golden brown and crispy. Add the fish which you have previously seasoned with salt and pepper. Baste it with some of the liquid from the veg. Mix the bread crumbs with the oregano and a little bit of water then sprinkle on top. Let cook for 15 -20 minutes, until the fish is white and flaky. For extra crispiness grill for few minutes. Serve with fresh black pepper.
